Fries / Cheese Fries

Ingredients:
- 4 potatoes
- oregano
- garlic salt
- lemon pepper
- basil
- oil
- grated cheese (pepper jack and cheddar)
Directions:
Preheat oven to 375 degrees.
Slice potatoes into shoestring fries.
Put on a baking sheet and cover with just enough oil to coat potatoes (very little).
Use above seasonings to taste.
Cook for about 30 minutes turning after about 20 min - until just starting to crisp.
Broil for about 5 minutes to get desired crispiness.
Turn off oven.
Place on serving dish and then cover with grated cheese. Stick back in oven (it will still be warm enough) just long enough to melt cheese.
